Stuffed Peppers






I have taken a break from blogging for a while due to business being a hit and actually no real time to do blogging on the side. I now have a monthly news letter to keep everyone up to date. Thought it may be a bit more interesting to everyone. So that all my news is up to date and monthly. I will blog when I feel I have a moment or 2 to spare.

I'd like to share a very yummy stuffed pepper recipe that I made for tonight's dinner. It's a great way to use up garden fresh peppers especially when you don't know what to do with them

Stuffed Peppers

Ingredients:
•6 green bell peppers
•1 tablespoons butter
•1 tablespoon olive oil
•1/2 cup chopped onion
•1/2 cup chopped celery
•1 can (14.5 ounces) diced tomatoes
•1 can (8 ounces) tomato sauce
•1 clove garlic, crushed
•1 teaspoon dried leaf oregano
•1/2 teaspoon dried leaf basil
•2 teaspoons salt, divided
•1/2 teaspoon ground black pepper, divided
•1 egg, lightly beaten
•1 1/2 teaspoons Worcestershire sauce
•1 1/2 pounds lean ground beef or chuck
•1 1/2 cups cooked long-grain rice
•shredded mild Cheddar cheese, about 1/2 to 3/4 cup, optional

Preparation:

Directions for stuffed peppers with ground beef and rice
Cut tops off peppers; remove seeds and membranes. Chop edible part of tops and set aside. Rinse peppers under cold water. Place peppers in a large pot; cover with salted water. Bring to a boil; reduce heat, cover, and simmer for 5 minutes. Drain peppers and set aside.
Heat olive oil and butter in a large skillet over medium heat until hot. Sauté chopped green pepper (from tops), chopped onion, and chopped celery for about 5 minutes, or until vegetables are tender. Add tomatoes, tomato sauce, crushed garlic, oregano, basil, 1 teaspoon salt, and 1/4 teaspoon of pepper. Simmer for about 10 minutes.

In a large mixing bowl, combine egg with remaining 1 teaspoon salt and 1/4 teaspoon pepper, and Worcestershire sauce. Gently stir to blend; add ground beef, cooked rice, and 1 cup of the tomato mixture. Mix well. Stuff peppers with meat mixture and place in a 3-quart baking dish. Pour remaining tomato mixture over the stuffed peppers. Bake at 350° for 55 to 65 minutes. If desired, top stuffed peppers with a little shredded Cheddar cheese just before peppers are done; bake until cheese is melted.

Recipe for stuffed peppers serves 6.

Easter Weekend BLOG! ~Guest Blog for Spoiled Sugar~

Just wanted to start off and say a great big THANK-YOU to Spoiled Sugar for putting together an awesome AUCTION last week and all the venders who donated their product. Was a great success! All the money that was raised will go to Weekend to End Cancer.

Good Friday, Earth Day! This day was a great day doing a whole lot of things from getting orders delivered. Getting ready for Easter Weekend. Working on the boys Easter baskets. So what are you putting in the Easter Baskets that are a healthy choice? Here is a list of things that we have put in the boys basket . Yes Chocolate is in their basket but that's not what it's all about.

Need a easy stuffing recipe for your Easter Turkey? Baby Yums would like to share thing simple yet tasty recipe. *Recipe found on Cooking Nook"

Best Turkey Stuffing

3/4 cup butter
2 1/2 cups chopped onions
2 cups chopped celery
4 teaspoons dried sage
1 teaspoon salt
1 teaspoon dried savory
1 teaspoon pepper
1 teaspoon marjoram
1/2 teaspoon dried thyme
14 cups dried white bread, cubed

In a large frying pan, melt butter over a medium heat. Fry onions and celery together with the dried herbs, salt and pepper, stirring often, until vegetables are tender, about 10-15 minutes.

Transfer the mixture to a very large bowl. Add the bread cubes and mix well.

If you are making the stuffing ahead: Transfer the cooked vegetable mixture to a large bowl. Let cool and refrigerate in an airtight container for 24 hours. Mix with bread cubes before stuffing the bird.

Stuff the turkey at both ends with this mixture. (see our Roast Turkey Recipe for directions on stuffing the bird).

IMPORTANT: Stuff the turkey just before baking it. Do NOT stuff the bird ahead and let it sit, even in the refrigerator. It can become infected with bacteria and make you quite ill.

Is it Wednesday Already?















Ok so I have to admit I've been MIA for a while. But I'm back up for air. I've been scratching things off my "To Cook List" all my orders are officially caught up and delivered/picked-up and I'm sure Baby Yums is being enjoyed by little ones. Every Tuesday is "Tag Tuesday" Have fun with posting photos of yourself, your family, your little ones playing, doing crafts or just being silly eating and getting messy & then TAG yourself. I posted a few photos yesterday of my Boys and Me at the Sugar Bush.

Earth Day is coming April 22nd Share your stories and let us know what you will be doing with the kids. I found a great craft that I'd like to share with you. It's fun, messy. Even thought my 2.5 year old can't grasp the concept of the "EARTH" he still had fun with the craft & he keeps telling everyone about Earth so I plan on doing the Craft with him again on Friday but switch it up a little!

Sunday ~ Sorry

It's Sunday and sorry I've been MIA! With all this great news going on with Baby Yums and the new additions to our food choices & new Teething Cookies I've been working up a storm in the Kitchen. I've felt the love last night with 5 hours of just cooking, baking and packaging up the Baby Yums food. I just wanted to say a quick hello! I'm going to go out and Enjoy my "Sunday" even though it is crazy windy out there. I will be back on the blog on Tuesday night and update with photos of me in the kitchen working hard some recipes & some great spring toys for the wee-ones! Welcome Wednesday ~ to Baby Yums You may or may not have seen the good news posted in our previous blog. Just to give you a brief rundown and not to be repetitive. We’ve added a few changes to our website and prices take a look at our changes. For more information please feel free to read the blogs below or send an e-mail to info@babyyums.com We’ve been getting some inquires lately regarding delivery charges. As we’re all aware of the increases of gas prices Baby Yums offers delivery upon request. We charge .30 cents per km *one way* We think that is more then economical. We’ve done some research and the going rate for the province of Ontario is .55 cents per km. We’re also more then willing to meet half way if that cuts down the cost on your delivery charge. You will only be charged for the km to meet you half way. Another option if your not interested in picking up your order. All this info will be posted on our website shortly. Our teething cookies have finally made it to the list of “food choices” 12 cookies for $5.00 great for babies 8 month +. We’ve even eaten them as a snack in our house. Someone has to taste test them right? We’re still waiting for a few more entrees for Pear combos. We have received a few great combos and are excited to give them a try. Baby Yums has donated a $30.00 gift certificate with 2 Baby Yums magnets. For an auction taken place on Friday April 15th. All the money donated will go to The Weekend to End Cancer.
